Make The Dressing:
¼ cup extra-virgin olive oil
1 tablespoon minced shallots
2 teaspoons white wine vinegar
2 teaspoons honey
¼ teaspoon sumac
½ teaspoon kosher salt
For The Salad:
1 large English cucumber, thinly sliced
12 radishes, thinly sliced
3 stalks of celery, thinly sliced
¼ cup minced dill
¼ cup minced chives
3 tablespoons chopped mint
4 ounces goat cheese (chèvre)
Make the dressing: In a salad bowl, combine olive oil, shallots, white wine vinegar, honey, sumac and kosher salt.
Make the salad: Combine cucumber, radishes, celery, dill, chives, mint in the bowl with the dressing. Toss to combine. Top with crumbled goat cheese, freshly cracked pepper, and a sprinkle of salt. Serve immediately.
